A Recipe fit for a King made by the kitchen Princess -Chef Crissan Cristobal

Father's Day is fast approaching. Why don't you make a special dish for dad! I want to share with you a recipe from Chef Crissan Cristobal, 2013 National Food Showdown Silver Medalist-professional division:) Smoked Applewood Cinnamon prawns & Plum Salad with Citrus-Honey Dressing and raspberry marmalade
Smoked Applewood Cinnamon prawns & Plum Salad with Citrus-Honey Dressing and raspberry marmalade Dressing ingedients: Citrus Honey Dressing: 1/4 cup fresh lemon juice 1/4cup fresh orange juice 1tsp. Orange zest 1/4 cup honey 1 teaspoon Sea Salt 7-10 tablespoons olive oil Raspberry marmalade (optional) 1. For the Citrus Honey Dressing, mix lemon and orange juice, honey, sea salt and orange zest in small bowl. Slowly whisk in oil. Chilled. 2. Mix raspberry preserves and water in small bowl. Set aside. Dry rub Ingredients: 1 tablespoon plus 2 teaspoons Paprika, Smoked 1 1/2 teaspoon Cinnamon 1 1/2 teaspoons salt 1 teaspoon Black Pepper, Coarse Grind 1/2 teaspoon Chili Powder 1/2 teaspoon Coriander Seed, Ground 1/2 teaspoon Garlic Powder 1/2 teaspoon Ground Cayenne 1/2teaspoon brown sugar 3pcs prawns peeled and deveined 2 tablespoons olive oil 3pcs bacon Applewood wrap in foil and make a hole (for smoking process) 1. Mix seasonings in small bowl. Coat prawns with rub mixture and wrap in bacon. Thread shrimp onto skewers. Brush with oil. Place prawns in double broiler but instead of water, use the applewood wrap . Cover it and Let it smoke for 15-20minutes 2. While prawns is smoking. Grill the plums Salad Ingredients 1 tablespoon olive oil 3 plums, each cut into 6 slices 1 package (5 ounces) spring mix salad greens Grill plums 1 to 2 minutes or until grill marks appear, turning frequently and brushing with 2 tablespoons of the Dressing. To serve, divide salad greens. Top each with smoke shrimp and grilled plums Serve with citrus Honey Dressing. And raspberry marmalade. Try this recipe and surely your dad will love it!
